冷吃牛肉是四川的一道特色小吃,把牛肉先卤后炸,跟干辣椒混合炒制,放凉后食用,可以作为一道零食或者下酒菜,大人小孩都适合哦~

冷吃牛肉

牛肉:500g
大葱、干辣椒、辣椒粉
卤料包:八角桂皮香叶豆蔻小茴香陈皮
(建议买现成的,有什么就放什么)
配料
食用油、糖、鸡精、生抽、老抽、料酒

整块牛肉放入冷水中焯水,大火煮,尽量不要让水煮沸,这样可以煮出更多浮末

▲把表面的浮末撇除,捞出牛肉;

这里用现成配好的卤料,放入过滤纸中,用绳子扎紧备用;

另起一锅,加入冷水没过牛肉1厘米,放入卤料包、葱段,淋入6勺生抽,1勺老抽,2勺料酒

开大火煮,煮开后转中小火卤制1小时;这里用生抽入味,不够可以再加;

放凉后放案板上切片,顺着纹路切

然后顺着纹路切成条,这样更有嚼劲,可以撕着吃

锅中放入较多的油烧至8成热,放入牛肉条;这里油可以多一点

▲用小火煸炒,炒干牛肉的水分,大约要炒5分钟;

大约5分钟后放入干辣椒丝,继续用小火把干辣椒炒香

炒香后放入辣椒粉

大约炒1分钟后放入1勺白糖,半勺鸡精提味
